Banana OATMEAL Bread FIASCO!

This is a good example of Banana Bread gone wrong but still Tasting Great. I cooked this double the time the recipe requested because it never cooked through the middle. Finally I gave up and pulled it out. Zach and I ate the crust top-DELISH! I'm putting the rest of it back into the oven to finish cooking. Tastes great, but can anyone help me figure out how to fix it???
BANANA OATMEAL BREAD
  • 1/2 c. Shortening
  • 1 1/2 c. Sugar
  • 2 Eggs
  • 1 1/4 tsp. Baking Soda
  • 1 tsp. Vanilla
  • 1/2 tsp. Salt
  • 1/2 tsp. Nutmeg
  • 1 tsp. Cinnamon
  • 2 Banana's mashed
  • 1 1/2 c. Sifted Flour
  • 1 c. Quick Oats
  • 1 1/2 c. Boiling Water

Soak oatmeal in boiling hot water while you mix the remaining ingredients. Cream shortening, sugar, and eggs. Add remaining ingredients and mix well. Bake at 350 in greased and floured bread pan for 35-40 min. (or if you are like me-120 min) HELP!

I wonder if it's meant to be baked in smaller bread pans... like the mini loaf pans... just off the top of my head. I hate it when things like this don't work out. You get all excited and then... nothin'. I had a similar experience on Sunday with my enchiladas. At least the top was delicious... that's generally the best part anyway. :)

I have yet to have a tasty bread come out cooked all the way through. This is why I've stopped making one big loaf (as Katie suggests) and either making smaller loaves or muffins. They cook MUCH more evenly!
