i am in dire need of easy breakfast. much to my chagrin, i rarely have time to whip up a neat-o breakfast. i'm open to make-ahead ideas, super-fast & delicious, whatever you got.
Here's the thing... not sure I'll be a lot of helps here since I pretty much eat one of the same three things each and every morning:
1. bowl of cheerios, skim milk, and banana
2. scrambled eggs (1 whole egg, 2 egg whites) with tomato, avacado, and toast
3. old fashioned oatmeal... 2/3 c. oatmeal, just over twice as much water... microwave 3 minutes, add a touch of brown suger, 1/3 c. skim milk... stir, stir, stir, and sliced banana.
But for some reason, I'm thinking you're not going to jump aboard any of those ideas... especially #2. :) Too bad for you!
Actually, I have been in a breakfast slump lately myself. It's too early to think creatively in the AM so I usually end up having the same thing. Kashi go lean crunch or fiber one cereal with frozen blueberries and raspberries and sliced banana. Simple. Fast. Good.
On a side note, I also really enjoy both the blueberry muffin recipes on this blog. But lets face it, that's a weekend breakfast. Unless of course there are leftovers.
Katie- I will have to try your scambled eggs. The steel cut oatmeal is always good too. So is cracked wheat cereal.
I do eat scrambled eggs and oatmeal is a staple. I add pecans to the oatmeal for some extra protein. The real problem is getting avocados here. Too far away from the source = muy expensivo. Also, I'm having a banana aversion.
Brandon is on a steel cut oatmeal kick. It tastes like oatmeal, just different texture.
Em: Kashi & Fiber One pretty much got me through my Masters and time in SD. It'll be a while before I can go down those roads again. :)
